Greg and I (Vail) met, fell in love, and decided to build a life together; A life full of lots of hard work and adventure. We quickly decided that spending our lives as close as possible to soil, fresh food, and nonhuman animals was a dream we both shared. Oh, and babies! We launched The Croft in 2013 – and although each day is different and sometimes challenging – we are so happy with our small farm and big quality of life. Greg, who hails from SW England, spends his days tilling, amending, and planting the soil and feeding and tending to the animals – only coming inside for an occasional cup of tea (or beer, depending on the season or hour)! He is always always always dirty. A former tea-buyer for Tazo Tea, he ponders the day when his apple orchard matures enough to brew home cider (projected in 2021). I am a New York native and an Associate Professor at a local university. I spend my days teaching on-campus or at home researching, reading, writing, and envisioning what's next for our farm. My research often takes me abroad (most recently to China, Tanzania, Zanzibar, Rwanda, Nicaragua, Austria, Ethiopia, Uganda, and South Africa) to explore nature, ecology, and environmental conflict.
